Recipe Notes

Variations:

  • Blueberry Muffins: Add 300g of fresh blueberries. We love adding 175g of white chocolate chips in with them.
  • Bacon & Cheese Muffins: Fold in 250g of grated cheese and 115g of crisp, cooked bacon bits
  • Chocolate Chip Muffins: Add 350g of chocolate chips
  • Coconut Pecan Muffins: Add 120g of shredded coconut and top off with chopped pecans and a sprinkle of shredded coconut
  • Carrot Cake Muffins: Add 220g of shredded carrots. 2 teaspoons of ground cinnamon. 2 teaspoons of Vanilla Extract
  • Strawberry Jam Muffins: Fill the muffin cup about ½ way full of batter. Then add a spoonful of strawberry (or your favorite) jam. Then, cover the jam with the rest of the batter.
  • Spiced Apple Muffins: Add 235g of diced apples. 2 teaspoons of cinnamon. 2 teaspoons of vanilla extract. 1 teaspoon of nutmeg.
  • Orange Zest Muffins: Instead of using 500ml of milk. Instead, use 250ml of milk and 250ml of orange juice. Top with orange zest or a few cranberries for an added boost.
  • PB & J Muffins: Mix in 500g of peanut butter into your batter. Top with a dollop of your favorite jelly prior to cooking.
  • Cranberry Banana Muffins: Add 200g of frozen or fresh cranberries and 1 smashed banana to your batter.
  • Cinnamon Raisin Muffins: Add 300g of raisins and 2 teaspoons of cinnamon to your batter. We like to add a 125g of chopped nuts in with it.
  • Pink Princess Muffins: Add 160g of strawberries, 225g of canned pineapple, 50g of sweetened coconut and 2 teaspoons of vanilla extract. These taste even better with some bright pink icing and multi-colored sprinkles.
